PROJECT SERIES

In established corporate environments, code names are often assigned to experimental or secretive projects. We think that's silly. So we, being silly folks, have decided to do something similar and have dubbed this our Project Series - experimental pursuits that may or may not yield results. 

PROJECT: ECLIPSE

This project is a long aged rum that we distilled on the last total solar eclipse on August 21, 2017, and placed in a 30 gallon barrel 2 days later. We will remove this rum from the barrel on April 8, 2024, making it 6-years, 7-months and 18-days old rum, and the only product currently planned for an extended and set amount of time in new cooperage.

PROJECT: GEMINI

Project: Gemini is so named because these two barrels - previously used by us to make our N.C. Amber Rum - were filled on the same day (June 23, 2017). This project is an experiment to help us understand what happens to tannin loads in used cooperage over a long period of time. Although we don't have a specific end date for the project, we plan to analyze the contents of the barrels on June 23, 2019. If deemed worthy, we may bottle one or both of these barrels in a limited release.
